Whole30 Zucchini Slices
As seen on Day 14 of our Whole 30 Challenge.
Whole30 Zucchini Slices
INGREDIENTS:
3 zucchinis, sliced
1 tablespoon olive oil (or coconut oil)
1/2 teaspoon minced garlic
Everyday Spice Blend (or other Whole30-approved spices)
NOTE:
You can also just use salt and pepper to keep the spices simple.
STEPS:
Slice up the zucchinis in uniform, even slices.
Heat a pan over medium heat with olive oil (or coconut oil).
Sauté the garlic for about 2 minutes, but avoid it turning brown.
Pan-sear each side of the zucchinis in the oil until they are lightly browned but not wilted. They should be slightly crisp but still tender. (This is usually about 2 minutes per side, but it depends on the size of your slices.)
