PRE-BREAKFAST:
Morning thoughts: Just realized it was St. Patty's Day today (hence the green text).

Actually I realized 2 weeks ago when we had to decline a St. Pat's Day party due to hubs' work schedule. Even though I'm not Irish, I do enjoy a good St. Patty's Day beverage and get together. Didn't really think this one through when we signed on for this in March.

Call me crazy, but I'm pretty sure "being on Whole30" on St. Patty's Day wasn't on this list...

Looks like we'll have to sit this St. Patty's Day out. Better this than Thanksgiving or Christmas though! Having leprechaun-approved green eyes, I'd like to think I'm immune to pinches. But to be on the safe side, yes, I wore my green anyway, but hubs did not, so you better believe he received a pincheroosky.
BRUNCH:
Only getting 3 hours of sleep the night before, we decided to sleep in, so brunch it is! Hubs made scrambled eggs with bison and the remaining sweet potatoes (on our green plates of course). Click HERE to access the recipe for our Whole30 Sweet & Savory Sweet Potatoes. Don't worry, hubs bought the bulk supply of sweet taters and already pre-cut them with our food processor, so I have a feeling you'll be seeing many more of these sweet tots soon.
DINNER:
With March Madness going on, there seems to be quite a bit of distractions and reasons to stay out of the kitchen. Since the games kept us a little preoccupied tonight, let's just say that we had a hodgepodge of Whole30 approved fruits, veggies, meats, and of course, almond butter.
I have a feeling Chipotle will be in the cards for this weekend... Stay tuned on Monday for the St. Patty's Day Weekend Recap.
P.S. Since Creighton lost, looks like I'll be cheering on Duke and KU...
